How Salt Water Taffy came to be:Take a stroll around any beach town and you’re sure to find Salt Water Taffy. The classic east coast candy originated in Atlantic City, New Jersey, in the late 19th century. In 1883, David Bradley’s candy shop was flooded by a storm, and sea water poured into his stock of taffy. When a little girl came in asking to buy a bag, Bradley jokingly told her she can have some “salt water taffy.” The girl tried it and loved it, and the name stuck. Since then, Salt Water Taffy grew in popularity, despite not actually containing any salt water! Joseph Fralinger and Enoch James refined the methods to sell it commercially, and by the 1920’s there were over 450 companies making the seaside treat.
Prior to the flooding of Bradley’s shop, taffy, and its pulling, was a kind of gathering for families and friends. People would host taffy pulling parties, where everyone came together, buttered their hands and pulled away!
The purpose of pulling:
Pulling taffy adds air, making it lighter, softer and chewier. It is stretched out and then folded upon itself, trapping air between the two pieces. This process is repeated until it reaches the right consistency. Most Salt Water Taffy is pulled by machines now, allowing for larger quantities to be made quickly. A machine will pull taffy to perfection in just a few minutes, whereas doing it by hand can take around 15 minutes.
How we made it vegan:Yes, it’s vegan!! By using sweetened condensed coconut milk, we were able to make this Salt Water Taffy available for those with dairy allergies or preferences. With just 5 simple ingredients - organic tapioca syrup, organic cane sugar, organic sweetened condensed coconut milk, water, all natural (plant-based) organic flavour concentrates, you can be sure that our taffy is way that grandma used to make it (with just a vegan twist). The coconut also adds a rich, creamy flavour to the taffy, making it hard to just have one piece!
